Resumen
En el presente trabajo se seleccionó la mejor variante de los trabajos anteriores para la producción de maltina a escala de banco. Se presenta una revisión bibliográfica en la cual se abordaron los principales aspectos relacionados con la enfermedad celíaca, la cual es la que provoca que se necesite trabajar en la búsqueda de alternativas para la producción de alimentos a partir de otras fuentes que no sean los cereales tradicionales como el trigo, la avena, la cebada y el centeno, por los altos contenidos de gluten presentes en ellos, que son incompatibles con la dieta de los enfermos celiacos. También se abordan otros aspectos relacionados con el sorgo por ser la materia prima seleccionada para la elaboración de la maltina. Se realizó el malteado del cereal y la caracterización de las maltas obtenidas. Se seleccionaron de forma preliminar los principales equipos de una planta para la producción de maltina y se escaló el equipo principal, el macerador para la conversión de los azúcares. Se efectuó el análisis económico que demuestra que esta variante no es factible desde el punto de vista económico. Además se realizó un análisis de sensibilidad para la variación del precio del producto. El trabajo tiene un gran impacto desde el punto de vista social, pues significa una alternativa para la alimentación de los niños celíacos.
In this work the best variant of the earlier work to produce Maltina bench scale was selected. A literature review in which one the main aspects of celiac disease is addressed. Therefore, it can cause them to need to work on finding alternatives for food production from other sources like traditional cereals presented such as wheat, oats, barley and rye, by high levels of gluten presents in them, which are incompatible with the diet of celiac patients. Other aspects of sorghum can be the raw material selected for making the Maltina are also addressed. Malting of grain and malt obtained characterization was performed. Preliminarily, they selected major equipment of a plant for the production of Maltina and the main computer, the macerator for converting sugars escalated. Economic analysis shows that this variant is not feasible from an economic point of view is performed. In addition, a sensitivity analysis to the change in price of the product was made. The work has a big impact from the social point of view, as an alternative means for feeding celiac children.
