Resumen
En los últimos años ha aumentado la diversificación agrícola hacia sectores como las
frutas y las hortalizas, debido a que constituyen una de las fuentes más importantes de vitaminas y minerales en la dieta humana. La determinación no destructiva de la
calidad interna de la fruta es un objetivo prioritario en las investigaciones más recientes.
La espectroscopia en el Visible (Vis) e Infrarrojo cercano (NIR) se ha convertido
en una técnica analítica muy útil para la determinación no destructiva de parámetros de
calidad en alimentos, adaptándose plenamente a las frutas tropicales en términos de
control de calidad. El objetivo principal de esta investigación está encaminado a
establecer la correlación entre la concentración de los elementos químicos que definen
la calidad de la fruta bomba (Carica papaya L.) y sus correspondientes longitudes de
ondas mediante el análisis espectroscópico VIS/NIR. Las metodologías utilizadas
incluyen la metodología para la preparación de las muestras de fruta bomba, para la
realización de los análisis químicos, para la determinación de los espectros y para el
procesamiento de los resultados. El principal resultado de esta investigación es
proponer un método para la determinación de la calidad de la fruta bomba mediante la
espectroscopia VIS/NIR.
In the last past years, the agricultural diversification has increased toward sectors like the fruits and the vegetables, because they constitute one of the most important sources of vitamins and minerals for the human diet. The nondestructive determination of internal quality from fruits is a high priority goal in the most recent investigations. The spectroscopy on the Visible (Vis) and near Infrared (NIR) has become a very useful analytic technique for the nondestructive determination of quality parameters in foods, adapting fully to the tropical fruits in terms of control of quality. The main objective of this investigation is to establish the correlation among the concentration of the chem ical elements, that define the quality of the pawpaw (Carica papaya L.) and its corresponding longitudes of waves by means of the analysis spectroscopic VIS/NIR. The used methodologies include the methodology for the preparation of the samples of pawpaw, for the realization of the chemical analyses, for the determination of the spectra and for the examination of the results. The main result of this investigation is to propose a method for the determination of the quality of the pawpaw by means of the spectroscopy VIS/NIR
