Resumen
El incremento de las actividades hoteleras y extra-hoteleras devenidas por la incursión
del turismo, no solo propone aportar vivencias significativas a sus clientes; el servicio de
excelencia, la atención personalizada, afable e inmediata a sus necesidades y solicitudes
denota la condición de seguridad en las entidades que operan la restauración en los
destinos turístico. Asociado a estos se hace indispensable que las entidades posean el
control de los productos y/o servicios relacionados a la seguridad alimentaria. Es por ello
que se ha desarrollado el presente trabajo en el área de restauración del hotel “Villa La
Granjita”. Para lo cual el trabajo tiene como objetivo la elaboración de un plan de mejora
para las actividades alimentaria para dicha área. Como principal resultado se obtiene
una delineación del plan que permite la posterior implantación, favoreciendo a gestionar
servicios de excelencia e inocuos. El plan, se sustenta en la aplicación de disímiles
métodos y técnicas modernas en la gestión de restauración, recogidas en el estudio
bibliográfico realizado. Dentro de los que se pueden destacar: las entrevistas, encuestas,
el criterio de expertos, el análisis de documentos y la lista de chequeo como principal
herramienta de diagnostico. La aplicación de la metodología propuesta garantiza su
validación al alcanzar resultados, en varias de sus etapas, que contribuyen al
mejoramiento de la gestión de restauración en la entidad objeto de estudio práctico.

Associated with these it is essential that institutions have the control of the goods and / or services related to food security. This is why it has developed this work in the area to restore the hotel "Villa La Granjita." To which the study aims to draw up an improvement plan for food activities to that area. The principal result obtained by a delineation of the plan that allows the subsequent implementation by promoting excellence in managing and safe services. The plan is based on the application of dissimilar methods and modern techniques in the management of restoration, listed in bibliographic study. Within which we can mention: interviews, surveys, expert criteria, analysis of documents and the check list as the main diagnostic tool. The implementation of the proposed methodology ensures validation to achieve results, in several stages, which contribute to improving the management of restoration in the entity being practical study.
