Resumen
El trabajo abordó el estudio del manejo y tratamiento poscosecha de la yuca (Manihot
esculenta Crantz ) para el mercado fresco. En el mismo se procedió al estudio de la
variedad de yuca ―Jagüey Dulce‖ perteneciente a un productor privado en el ―Valle del
Yabú‖ en el municipio de Santa Clara, provincia Villa Clara. Como objetivo del trabajo
se planteó la posibilidad de proponer una nueva t ecnología poscosecha de la yuca
(Manihot esculenta Crantz) para el mercado fresco. En la investigación teórica se hizo
una amplia revisión bibliográfica del estado actual del tema objeto de estudio tanto en
el ámbito nacional como internacional . Se realizaron diversas pruebas experimentales
de la variedad objeto de estudio en el laboratorio de Bromatología, en el Centro de
Investigaciones Agropecuarias (CIAP) de nuestra facultad. Algunos de los resultados
más importantes estuvieron relacionados con las propiedades físico-mecánicas de la
raíz, su contenido de azúcar, su acidez, deterioro fisiológico y microbiano,
susceptibilidad a impactos y los coeficientes de fricción estáticos y dinámicos. Los
resultados fueron analizados mediante el paquete estadístico ¨STATISTICA 8.0¨ , estos
resultados fueron contrastados con investigaciones anteriores en este mismo cultivo en
otros países del área. Finalmente se recomendó la tecnología poscosecha de la yuca
para las condiciones cubanas, lo cual pudiera mejorar esta actividad en nuestro país.
The work approached the study of the postharvest handling and treatment of the yucca (Manihot esculenta Crantz ) for the fresh market. In the same one it proceeded to the study of the yucca variety "Sweet Jagüey" belonging to a private producer at "Fences of the Yabú" in the municipality of Santa Clara, province’s Villa Clara. As objective of the work it thought about the possibility to propose a new postharvest technology of the yucca (Manihot esculenta Crantz) for the fresh market. In the theoretical investigation, a wide bibliographical revision of the current state of the topic was made so much in the national as international environment. They were carried out diverse experimental tests of the yucca variety at the Bromatology laboratory, in the Center of Agricultural Investigations (CIAP) of our faculty. Some of the most important results were relate d with the physical-mechanical properties of the root, their sugar content, their acidity, physiologic and microbial deterioration, susceptibility to impacts and the static and dynamic friction coefficients. The results were analyzed by the statistical package ¨STATISTICA 8.0¨, these results were contrasted with previous investigations in this same cultivation in other countries of the area. Finally, the postharvest technology of the yucca was recommended for the Cuban conditions, that which could improve t his activity in our country.
