Resumen
En la creciente industria del turismo y la hotelería se potencia el ámbito de la restauración
como uno de los principales activos y fuente de ingresos, debido a la importancia que
actualmente el público consumidor está dando a la gastronomía. La actividad de compras
dentro de los hoteles, por otro lado, es indispensable para el éxito del negocio turístico, de
ella dependerá la calidad de los productos y servicios que se ofertan al cliente final. Por esta
razón la elaboración, ejecución y seguimiento adecuado de un sistema de compras es una
tarea de vital importancia dentro de la gestión de una instalación hotelera, de ello se deriva
que la finalidad de la presente investigación, tribute al diseño de un Sistema de Gestión de
Compras (SGC) en el área de Alimentos y Bebidas del Complejo Hotelero “Rancho Luna –
Faro Luna” de manera que se garantice el aprovisionamiento constante de los productos
necesarios para la presentación de la oferta. El procedimiento se sustenta en la aplicación
de varias técnicas, métodos y herramientas que facilitaron el alcance de los objetivos
definidos; como son el uso de entrevistas no estructuradas, análisis de documentos, jurado
de opinión y diagramas de Ishikawa y Pareto. El principal resultado que se obtiene es un
SGC para el Complejo hotelero como instrumento de trabajo que le permitirá una mejor
planificación y organización de las compras, para satisfacer adecuadamente la creciente
demanda de productos en el área seleccionada. El sistema propuesto garantiza su
validación al alcanzar en la entidad objeto de estudio resultados cualitativos y cuantitativos
significativos a través de los análisis de validación realizados.
In the growing tourism industry and hospitality the field of power restoration as one of the main assets and source of income, because of the importance that the consumer public is now giving gastronomy. Buying activity in hotels, on the other hand, is indispensable for the success of the tourism business; it will depend on the quality of the products and services offered to the end customer. For this reason the development, implementation and proper monitoring of a purchasing system is a task of vital importance in the management of a hotel facility, it follows that the purpose of the present investigation tribute to the design of a Management System Purchasing (MSP) in the area of Food and Beverage Hotel Complex "Rancho Luna - Faro Luna" so that the constant supply of the products required for bid submission is guaranteed. The procedure is based on the application of various techniques, methods and tools that facilitated the scope of the defined objectives; such as the use of unstructured interviews, document analysis, opinion and jury Ishikawa diagrams and Pareto. The main result obtained is a MSP for the hotel complex as a working tool that will allow better planning and organization of purchases, to adequately meet the increasing demand for products in the selected area. The proposed system ensures validation to achieve the entity under study significant qualitative and quantitative results through the validation analysis performed.
