Resumen
El ácido cítrico es un ácido orgánico tricarboxílico que está presente en la mayoría de las frutas, sobre todo en cítricos como el limón y la naranja. Es un buen conservante y antioxidante natural que se añade industrialmente como aditivo en el envasado de muchos alimentos como las conservas de vegetales enlatadas. En el presente trabajo se realiza un estudio de las posibilidades de instalación de una planta anexa a la UEB Central Azucarero Uruguay, ubicado en el municipio Jatibonico de la provincia Sancti Spíritus, para la producción de ácido cítrico debido a la gran demanda que tiene este producto en la sociedad. Para su elaboración se realiza un estudio detallado del proceso tecnológico de producción de ácido cítrico analizando las diferentes variables de operación y los índices de costos, además se analiza la estructura de dirección de la UEB, se hace la gestión energética para la integración de esta planta al central; y el plan de riesgos y seguridad de la planta de ácido cítrico por ser la nueva instalación.
