Resumen
El trabajo se desarrolló sobre la base de las investigaciones realizadas en el
marco de un Proyecto Territorial, en conjunto con el grupo de mejoramiento
genético y producción de semillas de granos perteneciente al Centro de
Investigaciones Agropecuarias (C.I.A.P.) de la Universidad Central de Las
Villas (U.C.L.V.), el que involucra los Ministerios de Salud Pública. (MINSAP),
el de la Industria Alimenticia (MINAL) y el Ministerio de la Agricultura
(MINAGRI); teniendo como finalidad el estudio y evaluación de la utilización del
sorgo en la producción de alimentos para niños celiacos. Se fundamenta la
necesidad de buscar alternativas viables a la solución del problema alimentario,
basadas en la producción nacional. Se demuestra además que, teniendo en
cuenta las condiciones en las cuales se desarrolla el trabajo, las características
productivas del sorgo estudiado y la posibilidad de lograr mejorar la calidad de
vida de los niños celíacos, al incorporarles en su dieta los alimentos hasta el
momento prohibidos, dada su inocuidad por ser elaborados a partir de un
cereal no tóxico (el sorgo), se presenta como una alternativa. Se demuestra la
repercusión social, beneficiándose un sector de la población -la totalidad de
niños y niñas que padecen de la enfermedad celíaca en la provincia de Villa
Clara-. Por la importancia y necesidad de contribuir a la diversificación de la
producción de alimentos para niños celiacos, e incrementar su calidad de vida,
se generaliza y evalúa la posibilidad de incluir el sorgo en la alimentación,
llegando a lograr aportes considerables sin precedentes en la provincia.
The work was developed on the base of the investigations carried out in the mark of a Territorial Project, together with the group of genetic improvement and production of seeds of grains belonging to the Center of Agricultural Investigations (C.I.A.P.) of the Central University of The Villages (U.C.L.V.), the one that involves the Ministries of Public Health. (MINSAP), that of the Nutritious Industry (MINAL) and the Ministry of the Agriculture (MINAGRI); having as purpose the study and evaluation of the use of the sorghum in the production of foods for children celiac. The necessity is based of looking for alternative viable to the solution of the alimentary problem, based on the national production. It is also demonstrated that, keeping in mind the conditions in which is developed the work, the productive characteristics of the studied sorghum and the possibility of being able to improve the quality of the children's celiac life, when incorporating them in their diet the foods until the prohibited moment, given their non assimilation to be elaborated starting from a non toxic cereal (the sorghum), it is presented like an alternative. The social repercussion is demonstrated, benefiting the population's sector - the entirety of children and girls that suffer of the illness celiac in the county of Villa Clara -. For the importance and necessity of contributing to the diversification of the production of foods for children celiac, and to increase their quality of life, you generalizes and it evaluates the possibility to include the sorghum in the feeding, ending up achieving considerable contributions without precedents in the county.
