Evaluación de alternativas para la valorización de residuos generados en la Empresa Cárnica de Villa Clara y Pesquera Industrial de Caibarién

Abstract

Los residuos de la industria alimentaria constituyen un problema serio en gran parte del mundo. Es por ello que para que esta industria alcance un desarrollo sostenible es necesario adoptar medidas para aprovechar y valorizar estos subproductos. En la Industria Alimentaria en la provincia de Villa Clara, generalmente, los residuos van a disposición final, sin considerar la valorización de los mismos. En la presente investigación se profundiza en los fundamentos teóricos y metodológicos relacionados con la gestión de los residuos en la industria alimentaria, se caracterizan los principales residuos que se obtienen en los procesos de las empresas más importantes de este sector en la provincia, proponiendo alternativas para la valorización de residuos líquidos y sólidos en dos de sus principales entidades: Empresa Cárnica Villa Clara y Pesquera Industrial Caibarién. Esta investigación constituye un punto de partida para fundamentar las decisiones futuras en cuanto al tratamiento del potencial de residuos existente en el territorio, fuente fundamental para la producción de alimento humano y animal.

Waste from the food industry is a serious problem in much of the world. That is why, in order for this industry to achieve sustainable development, it is necessary to adopt measures to take advantage of and value these by-products. In the food industry in the province of Villa Clara, waste is generally disposed of, without considering the recovery of the same. . In the present investigation, the theoretical and methodological foundations related to the management of waste in the food industry are studied in detail. The main residues obtained in the processes of the most important companies in this sector in the province are characterized, proposing alternatives for the recovery of liquid and solid waste in two of its main entities: Meat Company of Villa Clara and Industrial Fisheries Caibarién. This research is a starting point to support future decisions regarding the treatment of waste potential existing in the territory, a fundamental source for the production of human and animal food.
