Resumen
El control y los sistemas de aseguramiento de la calidad son necesarios para ser
competitivos en la producción de alimentos. La unidad operacional durante el
procesamiento debe garantizar un flujo continuo de productos para que puedan
aplicarse las técnicas de monitoreo y seguimiento. El análisis de peligros y puntos
críticos de control (APPCC) es un instrumento para evaluar los peligros y establecer
sistemas de control que se centran en la prevención. En Cuba se ha avanzado
considerablemente hacia la comprensión y el control de los riesgos, y paralelamente ha
aumentado el interés de las empresas y organizaciones en el desarrollo de software
que automatice todo el proceso de negocio. Los sistemas de gestión de procesos de
negocio (BPMS) son una nueva categoría de software y abren una nueva era en la
infraestructura de las tecnologías de la información. Este trabajo presenta los resultados
de la incorporación del sistema de APPCC en la implementación de una metodología de
gestión de procesos de negocio (BPM), para el proceso de postcosecha del cultivo del
tomate. La integración de ambas metodologías permitió la determinar los niveles de
riesgos en los puntos críticos, causados principalmente por factores biológicos y físicos
en algunas de las etapas del proceso de postcosecha del tomate. Así mismo, el
modelado del proceso de negocio incrementa el grado de precisión en la toma de
decisiones y la eficiencia operacional.

Hazard Analysis and Critical Control Points (HACCP) is an instrument for assessing hazards and establishing control systems that focus on prevention. In Cuba, considerable progress has been made towards understanding and controlling risks, while at the same time increasing the interest of companies and organizations in software development that automates the entire business process. Business Process Management Systems (BPMS) are a new category of software and open a new era in information technology infrastructure. This paper presents the results of the incorporation of the HACCP system in the implementation of a business process management (BPM) methodology for the post - harvest process of the tomato crop. The integration of both methodologies allowed the quantification of risk levels, while the business process modeling increases the degree of precision in decision making and operational efficiency.
