Resumen
La capacidad de producción, en esencia, es el volumen máximo de productos que pueden ser elaborados en la unidad de tiempo utilizando eficientemente los recursos disponibles.
En función de ello, el presente estudio se centra en el diagnóstico, la determinación y análisis de las normas de trabajo en el área de producción de pizza de la UEB de producción y empaque Doña Neli, perteneciente a la sucursal Villa Clara de la corporación CIMEX, para mejorar la efectividad organizacional y el aprovechamiento de las capacidades de sus recursos humanos, enfocándose la investigación a los puestos de trabajos de los diferentes operarios que laboran en el área objeto de estudio, como herramienta fundamental para la gestión integrada de capital humano(GICH).
Se elabora un marco teórico de la investigación a partir de un análisis bibliográfico sobre la temática, registrando y clasificando los gastos de tiempos productivos e improductivos que inciden dentro de la Jornada Laboral, mediante técnicas de observación directa y continua para determinar las causas que los originan, proponiendo un rediseño en las funciones para lograr un aprovechamiento adecuado de la jornada laboral y la eliminación o disminución de las reservas de productividad del trabajo.
Se propone un análisis de las normas establecidas, el rediseño de las mismas en función de las capacidades de producción posible y el diseño de las normas del puesto manual no existente en la unidad, así como las tareas de los puestos en función de la eliminación de las reservas de productividad.
The production capacity, in essence, is the maximum volume of products that it can be elaborated in the unit of time using the available resources efficiently. In function of it, the present study is centered in the diagnosis, the determination and analysis of the work norms in the area of production of pizza of production UEB and packing Doña Neli, belonging to the branch Villa Clara of the corporation CIMEX, to improve the organizational effectiveness and the use of the capacities of its human resources, being focused the investigation to the positions of the different operatives' works that work in the area study object, as fundamental tool for the integrated management of human (GICH) capital. A theoretical mark of the investigation is elaborated starting from a bibliographical analysis on the thematic one, registering and classifying the expenses of productive and unproductive times that impact inside the Labor Day, by means of techniques of direct and continuous observation to determine the causes that originate them, proposing a redesign in the functions to achieve an appropriate use of the labor day and the elimination or decrease of the reservations of productivity of the work. It not intends an analysis of the established norms, the redesign of the same ones in function of the capacities of possible production and the design of the norms of the manual position existent in the unit, as well as the tasks of the positions in function of the elimination of the reservations of productivity.
