Resumen
El presente trabajo se realizó en el Hotel Playa Cayo Santa María, que pertenece al grupo de turismo Gaviota S.A. El slogan del grupo “Para vivir al natural”, denota su vocación medio ambientalista y su compromiso con el entorno natural, por lo que sus instalaciones y programas tratan de integrarse a los conceptos de naturaleza y cultura nacional, para convivir armónicamente con ellos. Por esto, el objetivo general de la investigación está dirigido a aplicar un procedimiento de producción más limpia que contribuya a la sostenibilidad de los servicios que se ofrecen en el hotel, para lograr la protección del medio ambiente. Se aplicó el procedimiento de Espinosa Martínez (2009), el cual permitió encontrar un grupo de alternativas que contribuyen a evitar el alto consumo de la energía eléctrica, el agua y la alta generación de residuos sólidos, siendo estos los problemas detectados en el proceso de Restauración con el diagnóstico realizado, para el cual se emplearon varias técnicas como la entrevista, observación directa, la revisión de documentos, aplicación de listas de chequeo, además de la construcción de gráficos, diagramas y tablas para facilitar el análisis de la información recogida. Se analizó la factibilidad técnica, económica y ambiental de las tres primeras alternativas propuestas para cada problema, concluyendo que son factibles para ahorrar la energía eléctrica, el agua y disminuir la generación de residuos sólidos.

Therefore, the overall objective of the research is aimed at applying a production procedure cleaner that contributes to the sustainability of the services offered at the hotel, for the protection of the environment. Applied Espinosa Martinez (2009) procedure, which allowed to find a group of alternatives that contribute to avoid high consumption of electricity, water and the high generation of solid residuals, these being the problems detected in the process of restoration with the diagnosis made, which were used in various techniques such as the interview, direct observation the review of documents, checklists, as well as the construction of graphs, diagrams and tables to facilitate the analysis of the information collected. Discussed the technical, environmental and economic feasibility of the first three alternatives proposals for each problem, concluding that they are feasible to save the electric power, water and to diminish the generation of solid residuals.
