Resumen
La restauración constituye un potente factor dentro de la estructura empresarial hotelera al
representar la segunda fuente de ingresos más significativa, por lo que es necesario encaminar
todos los esfuerzos hacia el logro de la máxima calidad de los servicios para satisfacer las exigencias
de los clientes. La actividad de aprovisionamiento dentro de los hoteles, por otro lado, es
indispensable para el éxito del negocio turístico; de ella dependerá la calidad de los productos y
servicios que se ofertan al cliente final. Por esta razón, la elaboración, ejecución y seguimiento
adecuado de un sistema de gestión de inventarios, es una tarea de vital importancia dentro de la
gestión del aprovisionamiento de una instalación hotelera; de ello se deriva que la finalidad de la
presente investigación tribute al diseño de un Sistema de Gestión de Inventarios para el Bar Piscina
«Los Pilongos» del Hotel Cubanacán América, de manera que se garanticen los productos
necesarios para la presentación de la oferta. La investigación, se sustenta en la aplicación de varias
técnicas, métodos y herramientas que facilitaron el alcance de los objetivos definidos; como son el
uso de entrevistas, análisis documental, trabajo con especialistas, elaboración de gráficas y tablas,
análisis estadísticos, entre otros. El principal resultado que se obtiene es un S.G.I como instrumento
de trabajo que le permitirá una mejor planificación de la oferta, para satisfacer adecuadamente la
demanda de productos en el punto de venta seleccionado.
The restoration is a powerful factor in the hotel business structure, representing the second most significant source of income, so it is necessary to direct all efforts towards achieving the highest quality of services to meet the demands of customers. The provisioning activity within hotels, on the other hand, is essential for the success of the tourism business; the quality of the products and services that are offered to the end customer will depend on it. For this reason, the preparation, execution and adequate monitoring of an inventory management system is a vitally important task within the management of the supply of a hotel facility; It follows that the purpose of this research is to design an Inventory Management System for the "Los Pilongos" Pool Bar of the Hotel Cubanacán América, in order to guarantee the products necessary for the presentation of the offer. The research is based on the application of several techniques, methods and tools that facilitated the achievement of the defined objectives; such as the use of interviews, documentary analysis, work with specialists, preparation of graphs and tables, statistical analysis, among others. The main result obtained is a S.G.I as a working tool that will allow a better planning of the offer, to adequately meet the demand for products at the selected point of sale.
