Resumen
La presente investigación se desarrolla en la Empresa Cárnica de Sancti Spíritus entidad encargada de sacrificar ganado mayor y menor para la elaboración y comercialización de productos cárnicos y sus derivados. Dicho trabajo tiene como objetivo diseñar un procedimiento general para el desarrollo de la planificación en períodos futuros de la producción de carne en la Empresa Cárnica de Sancti Spíritus. Para el cumplimiento de los objetivos de la investigación se llevó acabo un procedimiento de prospectiva, detectando primeramente los principales problemas de la empresa mediante el diagrama causa-efecto, para determinar mediante los programas MIC-MAC (Matriz de Impactos Cruzados – Multiplicación Aplicada a una Clasificación)y SMIC (Sistema de Matrices de Impactos Cruzados) las variables claves y los principales escenarios que pueda tener la empresa para la implementación de futuras estrategias.
Esta investigación presenta un valor práctico ya que permite identificar las deficiencias para su futura solución, además de tener un valor metodológico debido a que el procedimiento diseñado es aplicable a cualquier empresa del país teniendo en cuenta las características específicas del objeto de estudio.
The present investigation is carried out in the Carcass Company of Sancti Spiritus entity in charge of sacrificing livestock and juveniles for the elaboration and commercialization of meat products and their derivatives. This work aims to design a general procedure for the development of planning in future periods of meat production in the Carcass Company of Sancti Spiritus. In order to fulfill the objectives of the research, a prospective procedure was carried out, firstly detecting the main problems of the company through the cause-effect diagram, to determine through the MIC-MAC (Cross-Impact Matrix - Applied Multiplication Classification) and SMIC (Cross-Impact Matrix System) the key variables and the main scenarios that the company can have for the implementation of future strategies. This research presents a practical value since it allows to identify the deficiencies for its future solution, besides having a methodological value because the designed procedure is applicable to any company of the country taking into account the specific characteristics of the object of study.
