Resumen
Ocho variedades de Sorghum bicolor (L) Moench de color rojo, beige y blanco
procedentes del banco de germoplasma del CIAP fueron analizadas para determinar
la composición proximal del contenido de proteína bruta, grasas totales, cenizas,
fibra bruta, humedad y carbohidratos totales. Adicionalmente se identificó y cuantificó
en lo posible los compuestos mayoritarios en grasas y cenizas, contenido calórico y
puntuación química con el objetivo de aportar parámetros que permitan seleccionar
las variedades adecuadas a propósitos industriales y de consumo animal y humano.
También aportar elementos para seleccionar a las variedades potenciales de cruce
con vistas a obtener híbridos adecuados a los propósitos antes mencionados. Se
determinó el valor energético teórico que aporta cada variedad. Los valores
obtenidos de cada parámetro estudiado se corresponden con los rangos reportados
en la bibliografía consultada para este grano y todos fueron interrelacionados con las
características fenotípicas y biométricas de las variedades estudiadas
preliminarmente, lo cual permite tener criterios preliminares que pueden ser
extrapolados a las variedades no estudiadas aun.
Eight varieties of bicolor Sorghum (L) Moench of red, beige and white color coming from the bank of germplasma of CIAP was analyzed to determine the proximal composition of the content of gross protein, total, ashy fats, gross fiber, humidity and total carbohydrates. Additionally it was quantified the majority compounds as much as possible in fatty and ashy, caloric content and chemical punctuation with the objective of parameters that allow to select the appropriate varieties to industrial purposes toasting and of consumption animal and human. Also to contribute elements to select to the potential varieties of crossing to obtain hybrid appropriate to the purposes. The theoretical energy value of each variety was determined. The obtained values of each studied parameter belong together with the ranges reported in the bibliography consulted for this grain and all were interrelated with the characteristic phenotypic and biometric of the varieties studied preliminarily, that which permits to have preliminary approaches that be extrapolated to the varieties cannot still studied.
