Resumen
La presente investigación desarrolla el diseño de un Sistema de Gestión
Ambiental para el hotel Cubanacán “Los Caneyes” de Villa Clara, como respuesta
a la urgente necesidad del mejoramiento del desempeño hotelero en esta
temática y de la implementación de un instrumento que tribute al proceso de toma
de decisiones en una entidad que se encuentra insertada en el perfeccionamiento
empresarial. Teórica y metodológicamente fundamenta la viabilidad de la
sostenibilidad como modelo de desarrollo, sobre la base de los indicadores
existentes para este tipo de institución. Mediante el empleo de una metodología
adaptada a las condiciones específicas del centro, incluye la elaboración del
diagnóstico ambiental con la participación de un equipo multidisciplinario, en el
cual fueron determinados los aspectos e impactos ambientales del desempeño
institucional, utilizando técnicas de análisis tales como la encuesta, la entrevista,
el estudio de documentos, entre otros. Como resultado principal, se propone el
diseño del Sistema de Gestión Ambiental, adecuado a las condiciones
específicas del centro a partir de lo que se establece en la Norma ISO 14000. El
diseño realizado fue puesto a la consideración de especialistas para determinar
su factibilidad en cuanto a su implementación en el hotel, lo que responde a las
actuales exigencias de la demanda turística actual que se proyecta y exige un
turismo de paz, seguridad y salud.
In the present research a design for an Environment Management System for the Cubanacán Hotel “Los Caneyes” in Villa Clara is developed. This is done as a response to the urgent need to improve the hotel performance as to environmental issues, as well as the need to implement an instrument that would contribute to the decision-making process in an entity that is committed to an improvement process known in the Cuba as “Perfeccionamiento Empresarial” which roughly translates as “Making the Enterprise Perfect”. The feasibility of sustainability as a model for development is theoretically and methodologically explained, on the basis of the existing indicators for this type of institution. A methodology adapted to the specific conditions of the workplace is used, and it includes an environmental diagnosis carried out with the participation of a multidisciplinary team. The environmental impact and other aspects of the institutional performance were determined by using analysis techniques such as questionnaires, interviews, documents analysis, and others. The main outcome of the research is the proposal of the design for an Environment Management System, adapted to the specific conditions of the hotel and subjected to the norms ISO 14000. The design was presented to a group of specialists so as to determine whether it was feasible for implementation in the hotel. This is in tune with the current demands of tourists worldwide for peace, security and health.
