Resumen
La presente investigación se realiza en la Empresa de Productos Lácteos “Río Zaza”ubicada en la provincia de Sancti Spíritus en la cual el producto leche pasteurizada ha presentado problemas con su calidad e inocuidad, lo cual puede estar ocasionado debido a que la calidad se gestiona fundamentalmente a través del cumplimiento estricto de las normas técnicas y no en el análisis y planificación del proceso como un todo. Para dar solución a esta situación se usó como herramienta el despliegue de la función calidad (QFD) la cual, a partir de las necesidades de los clientes y teniendo en cuenta las actividades por las que pasa este producto fundamentalmente en el proceso de producción, desarrolla un grupo de matrices para finalmente establecer un plan de control
que le posibilite a la dirección de la empresa tomar decisiones que contribuyan a la mejora de la calidad y a lograr la satisfacción de los clientes.
