Resumen
La presente investigación se realizó en la empresa pesquera de Sancti Spíritus “PESCASPIR”, con el propósito de mejorar la calidad en el sistema logístico de aprovisionamiento de productos acuícolas a través de modelos predictivos de calidad que permitan la toma de decisiones oportunas y de esta forma reducir las pérdidas post cosecha. Para esto se propone un procedimiento que prevea la durabilidad de los productos pesqueros en función del tiempo y la temperatura de almacenamiento. Para la aplicación se escogió entre las especies cultivadas de peces dulceacuícolas la Carpa común debido a que constituye el mayor volumen de materia prima en el procesamiento industrial de productos pesqueros del país. Para el estudio se utilizan diferentes métodos y técnicas que ofrecen un soporte científico a la investigación, entre los que se encuentran: diagramas de flujo, causa- efecto, pareto, la tormenta de ideas, método Delphi, diseño de experimento, QIM, encuestas, consulta de documentos, entre otros. Todo lo anterior permitió valorar la situación actual del sistema, señalar los principales problemas que inciden en su correcto manejo y la posterior toma de decisiones en correspondencia de qué material puede ser adecuado para un determinado fin y uso, lo que garantiza la inocuidad alimentaria y la disminución de las pérdidas post cosecha.
The present investigation was carried out in the fishing company of Sancti Spíritus "PESCASPIR", with the purpose of improving the quality in the logistic system of supplying aquaculture products through predictive models of quality that allow the making of timely decisions and in this way reduce post-harvest losses. For this, a procedure is proposed that foresees the durability of the fish products as a function of the time and the temperature of storage. For the application was chosen among the cultivated species of freshwater fish common Carp because it constitutes the largest volume of raw material in the industrial processing of fishery products of the country. For the study, different methods and techniques are used that offer a scientific support to the research, among which are flow diagrams, cause and effect, pareto, brainstorming, Delphi method, experiment design, QIM, consultation of documents, among others. All of the above allowed to assess the current situation of the system, to identify the main problems that affect its correct management and subsequent decision making in correspondence of which material may be suitable for an specific purpose and use, which guarantees food safety and decrease in post-harvest losses.
