Resumen
La planificación de los recursos humanos en las entidades turísticas, ha crecido
significativamente a nivel nacional e internacional. Actualmente es un factor determinante para poder sobrevivir, desarrollarse y lograr el éxito empresarial, por lo que las empresas hoteleras han tenido que recurrir a una correcta planificación estratégica de sus recursos humanos (PRH) para obtener una fuente de ventaja competitiva sostenible respecto a sus competidores. En este marco toma gran importancia la planificación de los recursos humanos de forma estratégica
y proactiva. Por lo que el hotel Horizontes La Granjita se está adentrando en transformar su conducta y capacidad en el marco de la PRH. La presente investiga
ción tiene como objetivo elaborar la planificación estratégica de los recursos humanos en el área de alimentos y bebidas del hotel. Para definir dicha planificación se debe realizar un diagnóstico para conocer el estado actual de la PRH y luego aplicar el procedimiento seleccionado. El principal resultado que se obtiene es la definición de los perfiles de cargo por competencias para los trabajadores del área, además contiene la plantilla a nivel de hotel con las necesidades reales de trabajo en el área. Se emplearon varios métodos y técnicas como la observación directa, análisis y síntesis, entrevistas, encuestas y técnicas de trabajo en grupo.
Planning human resources in tourism entities has grown significantly nationally and internationally. Currently is a determining factor to survive, develop and achieve business success, so that hotel companies have had to resort to proper strategic planning of human resources (PHR) for a source of sustainable competitive advantage over its competitors. In this framework takes planning major human resources strategically and proactively. Therefore, the hotel Horizons the Small farm is entering his behavior and ability to transform part of the PRH. This research aims to develop strategic planning of human resources in the area of food and drinks from the hotel. To define such planning should be carried out an analysis of the current state of the PRH and then apply the selected method.
