Resumen
En este trabajo de diploma se presenta la propuesta de una nueva inserción
arquitectónica para centro gastronómico recreativo como sustitución de un inmueble sin
valor situado en el Centro Histórico de la ciudad de Santa Clara, que es el restaurante
de comida italiana “La Toscana”. Se exponen las definiciones y criterios básicos de
inserción, los principales antecedentes y las tendencias actuales en el desarrollo de
instalaciones de un conjunto de gastronomía y entretenimiento a través de la muestra de
los ejemplos nacionales e internacionales con un enfoque crítico de los mismos. También
se desarrolla un análisis del contexto y el inmueble sujeto de la inserción dando como
resultado la valoración, categorización y dictamen técnico. Se elabora un programa
arquitectónico formado por el tema del conjunto gastronómico recreativo, resultado del
compendio entre los intereses del inversionista y la visión objetiva en función de la
creación de una obra del estilo de arquitectura contemporánea, logra una integración
necesaria con el contexto histórico sin afectar a los valores patrimoniales del repertorio
arquitectónico existentes. Además, se exponen las premisas y criterios de diseño
generales y específicos, sobre los cuales se realiza la propuesta final. Esto se muestra
a través de un análisis de las variantes, plantas, cortes, elevaciones e imágenes de los
ambientes exteriores e interiores propuestos, el cálculo de las superficies resultantes
para cada local y su comparación con las premisas establecidas en el programa, así
como la estimación económica.
In this diploma work the proposal is to introduce a new architectural insertion for recreative gastronomic center as a substitute for a property valueless located in the historic center of the city of Santa Clara, which is the italian restaurant "La Toscana". They exhibit the definitions and basic criteria of insertion, the main antecedents and the present tendencies in the development of installations of a gastronomy and entertainment set are exposed through the sample of the national and international examples with a critical approach of the same ones. A context analysis and subject property and insertion resulting assessment, categorization and technical opinion is also developed. An architectural program formed by the theme of the recreational gastronomic group, resulting from the compendium between the interests of the investor and the objective view based on the creation of a work of the contemporary architecture style, achieves a necessary integration with the historical context without affecting the patrimonial values of the existing architectural repertoire. In addition, the premises and general and specific design criteria are exposed, on which the final proposal is made. This is shown through the variant analysis, floors, sections, elevations and images of the proposed outdoor and indoor environments, the calculation of the resulting surfaces for each location and their comparison with the premises established in the program, as well as the economic estimate.
