Resumen
La presente investigación tuvo como objetivo diagnosticar la relación entre la oferta y la demanda de productos con harina de sorgo para los pacientes adultos celíacos de Villa Clara. Estuvo sustentada en el paradigma positivista, con un enfoque cuantitativo. Se empleó un muestreo no probabilístico intencional de expertos en el caso de los especialistas, mientras que en el caso de los pacientes adultos celíacos la muestra fue igualada a la población. En el estudio fueron utilizados diferentes instrumentos de recogida de información, análisis de documentos, entrevistas semiestructuradas y encuesta.
La propuesta de una Investigación de mercado derivó de la sistematización teórica realizada y de los resultados obtenidos a partir de la aplicación de entrevistas y el análisis de documentos, relacionados con cada uno de los procesos que facilitan la extensión del Proyecto de utilización de harina de sorgo.
Como resultado del estudio se constató que es viable y económicamente posible extender a los pacientes adultos celíacos de Villa Clara el Proyecto de utilización de harina de sorgo que en este momento se implementa para la alimentación de niños con esta enfermedad. La investigación concluyó que la demanda de alimentos con harina de sorgo para pacientes adultos celíacos puede ser cubierta por la oferta existente, teniendo en cuenta el perfeccionamiento de algunas deficiencias por parte de las entidades responsables de su producción.
The present study aimed at diagnosing the relationship between supply and demand of products with sorghum flour for adult patients with celiac disease from Villa Clara. It was supported by the positivist paradigm, with a quantitative approach. An intentional non-probability sampling was employed by experts in the case of specialists, while in the case of adult celiac patients sample was matched to the population. Different instruments were used to gather information: document analysis, semi-structured interviews and some polls. The proposal of a market research derived from the theoretical systematization performed and the results obtained from the application of interviews and analysis of documents related to each of the processes that facilitate the spread of the Project that use sorghum flour. As a result of the study it was found that it is feasible and economically possible to extend to adult celiac patients of Villa Clara the Project that use sorghum flour for feeding children with this disease. The investigation concluded that the demand for food with sorghum flour adult celiac patients can be covered by the existing supply, taking into account the improvement of some deficiencies by the entities responsible for its production.
