Resumen
La presente investigación se realizó en la Empresa Pesquera de Villa Clara “Pescavilla”, con el objetivo principal de desarrollar un procedimiento general para gestionar por procesos cadenas de suministros de productos de la pesca, enfocado en la cadena de croqueta conformada, encaminado a la elevación de los niveles de fiabilidad de los procesos que la componen y su efectividad como medio para el logro de un nivel de servicio al cliente adecuado. Con vistas a lograr este objetivo se procedió a la aplicación de la primera fase del procedimiento general propuesto; los tres procedimientos específicos desarrollados se dirigieron: al diagnóstico, a la definición e identificación de los procesos logísticos y a la determinación de los perfiles de madurez de estos. Se emplearon encuestas, tormentas de ideas y entrevistas como principales técnicas de recolección de información, se detectaron los problemas principales existentes en la empresa y se proponen una serie de mejoras para los mismos. El trabajo contiene, además, un estudio bibliográfico que abarca diferentes temas relacionados con la gestión logística, la gestión por proceso, la gestión de la cadena de suministro, la fiabilidad y criticidad de los procesos asociados a un nivel de madurez determinado, la calidad del servicio al cliente y la toma de decisiones entre otros abordados, estos en función de la naturaleza del tipo de proceso que se realiza.
The present investigation was carried out in the Fishing Company of Villa Clara “Pescavilla", with the main objective of developing a general procedure to negotiate for processes chains of supplies of products of the fishing, focused in the chain of the croquet, guided to the elevation of the levels of reliability of the processes that you/they compose it and its effectiveness like means for the achievement of a level of service to the appropriate client. With a view to achieving this objective you preceded to the application of the first phase of the procedure; the three developed specific procedures went: to the diagnosis, to the definition and identification of the logistical processes and to the determination of the profiles of maturity of these. Surveys, storms of ideas and interviews like main techniques of gathering of information were used, the existent main problems were detected in the company and they intend a series of improvements for the same ones. The work contains, also, a bibliographical study that embraces different topics related with the logistical dministration, the administration for process, the administration of the supply chain, the reliability and reability of the processes associated to a certain level of maturity, the quality of the service to the client and the taking of decisions among others approached, these in function of the nature of the process type that is carried out.
