Resumen
La selección de las acciones encaminadas a mitigar los riesgos existentes en los diferentes procesos desarrollados en las empresas ha sido un tema de estudio que ha tomado mucho auge en la actualidad. En este sentido, la presente Tesis muestra un procedimiento que permite definir acciones de mejora en el proceso de Gestión de mantenimiento para el equipamiento de cocina del Hotel Cayo Santa María perteneciente a la Dirección Territorial Centro de Gaviota S.A. localizada en Villa Clara, en función de la combinación de los elementos característicos del Análisis de riesgo.
La tesis contiene una revisión bibliográfica que aborda las generalidades sobre la Gestión de mantenimiento, el Análisis de riesgo, las técnicas más utilizadas para estos fines, así como el Mantenimiento Basado en el Riesgo. Finalmente, la aplicación práctica del procedimiento seleccionado al equipamiento de cocina del hotel objeto de estudio práctico de la investigación, permitió definir las acciones preventivas a aplicar para mitigar el riesgo asociado a cada modo de fallo, el responsable de su realización y la frecuencia de la ejecución de las mismas. Todo ello ofrece solución al problema de la investigación.
The selection of the actions guided to mitigate the existent risks in the different processes developed in the companies has been a study topic that he/she has taken a lot of peak at the present time. In this sense, the present Thesis shows a procedure that allows to define actions of improvement in the process of maintenance Administration for the equipment of kitchen of the Hotel Cayo Santa María belonging to the Address Territorial Center of Gaviota located in Villa Clara, in function of the combination of the characteristic elements of the Analysis of risk. The thesis contains a bibliographical revision that approaches the generalities on the maintenance Administration, the Analysis of risk, the techniques more used for these ends, as well as the Based Maintenance in the Risk. Finally, the practical application of the procedure selected to the equipment of kitchen of the hotel object of practical study of the investigation, allowed to define the preventive actions to apply to mitigate the risk associated to each failure way, the responsible for its realization and the frequency of the execution of the same ones. Everything offers solution to the problem of the investigation.
