Resumen
En la industria de la restauración grandes cambios han ocurrido en los últimos años y
muchas empresas precisan ser competitivas para sobrevivir en el mercado. Para ello
deben buscar la mayor disponibilidad operacional de sus instalaciones. Esto se logra en
la medida que la explotación de las instalaciones sea eficiente, lo que está
estrechamente relacionados a los planes de mejora tecnológica que continuamente se
ven obligados a enfrentar los establecimientos de este tipo vinculados a las actividades
de Alimentos y Bebidas, y de lo cual el Hotel Santa Clara Libre, de la cadena Islazul de la
provincia de Villa Clara, no se encuentra exento. La presente investigación tiene como
resultado el diseño de un Plan de Mejora Tecnológica para el restaurant La Cima, el cual
provee acciones técnicamente fundamentadas encaminadas al cumplimiento de los
requerimientos establecidos en la NC 126:2001 y la NC 22000:2005. Para ello se
utilizaron variados métodos, técnicas y herramientas de recopilación y análisis de datos
tales como: la observación, listas de chequeo, criterio de expertos y la revisión
bibliográfica, destacándose dentro de esta última el análisis de documentos rectores de
la actividad turística en el país y tratando diferentes enfoques que establece la literatura
especializada en esta actividad a nivel internacional visto como un proceso que requiere
de la mejora tecnológica continúa, sustentada en acciones que complementen y hagan
efectiva la inversión realizada, logrando cumplir las expectativas de los clientes
expresados en satisfacción y seguridad de los servicios recibidos.
Big changes have taken place in the restaurant industry in the last few years and lots of enterprises need to be competitive to overstay in the market, so they should have the greatest business activity of their facilities. It is achieved as long as the running of the facilities is efficient, which is closely linked to technological improvement plans that these food and beverage institutions continuously have to face up, and Santa Clara Libre hotel from Islazul chain from Villa Clara province is not an exemption. This research results in a technological improvement plan to be designed for “La Cima” Restaurant which provides technical informed decisions aimed at fulfilling the purposes set forth in NC 126:2001 and NC 22000:2005. In order to do this a range of methods, techniques, recovery procedures and data analysis were used such as observation, check-up lists, experts´ report and bibliographical enquires emphasizing in guiding documents of tourist attraction in the country and dealing with different approaches that tourist specialized literature states worldwide seen as a process which needs continuously technological improvements, maintained in acts that improve and make investment effective, managing to meet guests´ expectations expressed in satisfaction and security of received services.
